For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 tbsp red food coloring
  • 1 tsp white vinegar
  • 1 cup cream cheese frosting
  • 1/4 cup strawberry or raspberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternately mix in dry ingredients and buttermilk. Stir in food coloring and vinegar.
  5. Divide batter evenly among liners. Bake for 18-20 minutes, then cool completely.
  6. Frost cupcakes with cream cheese frosting and top with a dollop of jam.
