For the Crust:
- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 tbsp red food coloring
- 1 tsp white vinegar
- 1 cup cream cheese frosting
- 1/4 cup strawberry or raspberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternately mix in dry ingredients and buttermilk. Stir in food coloring and vinegar.
- Divide batter evenly among liners. Bake for 18-20 minutes, then cool completely.
- Frost cupcakes with cream cheese frosting and top with a dollop of jam.
