For the Crust:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
1. Prepare the Crust:
- In a large bowl, mix together peanut butter, softened butter, powdered sugar, vanilla extract, and salt until well combined.
- Roll the mixture into small balls (about 1-inch in diameter) and place them on a parchment-lined baking sheet.
- Freeze the peanut butter balls for 30 minutes to firm up.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Using a fork, dip each peanut butter ball into the melted chocolate, coating completely, then return to the baking sheet.
- Let the chocolate set at room temperature or refrigerate for faster results.
- Store in an airtight container in the refrigerator.
