For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the sausage over medium heat, breaking it into small pieces as it cooks.
  2. Add onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Stir in chicken broth, white beans, diced tomatoes, thyme, and oregano. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Serve hot with crusty bread if desired.

You can customize the seasonings to taste.
