For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup diced fresh strawberries
- 1/2 cup whipped cream
- 1 tbsp strawberry jam (optional)
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into mini muffin tins to form crusts.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in diced strawberries and whipped cream gently.
- Spoon the cheesecake mixture over the crusts in the muffin tins.
- Drizzle with strawberry jam if desired.
- Refrigerate for at least 2 hours before serving.
