For the Crust:

  • 1 cup almond milk
  • 3 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together almond milk, chia seeds, honey (or maple syrup), and vanilla extract.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight, until the pudding thickens.
  4. In a separate bowl, mash half the strawberries with lemon juice to create a compote.
  5. Layer the chia pudding and strawberry compote in serving glasses, then top with the remaining sliced strawberries.
  6. Serve chilled.
