For the Crust:
- 2 cups Golden Oreo crumbs
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup strawberry preserves
- 1 cup freeze-dried strawberries, crushed
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 4 tbsp cold unsalted butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix Oreo crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour half the batter over crust. Swirl in strawberry preserves, then top with remaining batter.
- Combine crushed strawberries, flour, brown sugar, and cold butter to make crumble topping. Sprinkle over cheesecake.
- Bake for 50-55 minutes until center is slightly jiggly. Cool completely before refrigerating for 4 hours.
