Strawberry Crunch Cheesecake

A creamy cheesecake with a strawberry swirl and golden Oreo crust, topped with a crunchy strawberry crumble.

For the Crust:

  • 2 cups Golden Oreo crumbs
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup strawberry preserves
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 4 tbsp cold unsalted butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix Oreo crumbs with melted butter and press into a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  3. Pour half the batter over crust. Swirl in strawberry preserves, then top with remaining batter.
  4. Combine crushed strawberries, flour, brown sugar, and cold butter to make crumble topping. Sprinkle over cheesecake.
  5. Bake for 50-55 minutes until center is slightly jiggly. Cool completely before refrigerating for 4 hours.
