For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup mixed summer berries (strawberries, blueberries, raspberries)
- 1 ripe peach, sliced
- 1 tablespoon honey (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Spread the filling over the cooled crust. Refrigerate for at least 4 hours or overnight.
- Before serving, top with mixed berries and peach slices. Drizzle with honey if desired.
