Summer Berry and Peach Cheesecake

A refreshing and creamy cheesecake bursting with the flavors of summer berries and peaches.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup mixed summer berries (strawberries, blueberries, raspberries)
  • 1 ripe peach, sliced
  • 1 tablespoon honey (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  6. Spread the filling over the cooled crust. Refrigerate for at least 4 hours or overnight.
  7. Before serving, top with mixed berries and peach slices. Drizzle with honey if desired.

Notes

You can customize the seasonings to taste.
