For the Crust:

  • 1 cup mashed sweet potato
  • 1/2 cup honey
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and honey until smooth. Add mashed sweet potato, egg, and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
