7UP Pound Cake

A moist and flavorful pound cake made with 7UP for a light and citrusy twist.

For the Crust:

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 1/2 cups (3 sticks) unsalted butter, softened
  • 5 large eggs
  • 3/4 cup 7UP soda
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease and flour a 10-inch Bundt pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in vanilla extract and almond extract.
  5. Gradually add flour and salt, alternating with 7UP, beginning and ending with flour. Mix until just combined.
  6. Pour batter into the prepared Bundt pan and smooth the top.
  7. Bake for 60-75 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
