Apple Cinnamon Cheesecake Cupcakes

Delicious mini cheesecakes with a spiced apple topping, perfect for fall.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1 tsp cinnamon
  • 2 tbsp brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tbsp into each liner to form crust.
  3. Beat cream cheese, sugar, eggs, and vanilla until smooth. Spoon over crusts.
  4. Toss apples with cinnamon and brown sugar. Top each cheesecake with apple mixture.
  5. Bake for 25 minutes or until set. Cool completely before serving.

Notes

You can customize the seasonings to taste.
