Delicious mini cheesecakes with a spiced apple topping, perfect for fall.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1 tsp cinnamon
- 2 tbsp brown sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter. Press 1 tbsp into each liner to form crust.
- Beat cream cheese, sugar, eggs, and vanilla until smooth. Spoon over crusts.
- Toss apples with cinnamon and brown sugar. Top each cheesecake with apple mixture.
- Bake for 25 minutes or until set. Cool completely before serving.
