  • For the Pancakes:
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup cottage cheese
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, mix the cottage cheese, milk, egg, maple syrup, and vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apple.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease if needed.
  5. Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm with additional maple syrup.

Notes

For extra fluffiness, make sure not to overmix the batter. Serve with a dollop of whipped cream or yogurt for added comfort.
