These warm and cozy pancake bites are made with oats, cottage cheese, and apples for a high-protein breakfast.

  • 1 cup cottage cheese
  • 1 medium apple, diced
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1 tablespoon honey

Instructions

  1. In a large bowl, mix together the oats, cottage cheese, diced apple, eggs, cinnamon, and honey until well combined.
  2. Preheat the oven to 350Β°F (175Β°C) and grease a muffin tin.
  3. Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
  4. Bake for 15-20 minutes or until golden and set.
  5. Allow to cool slightly before serving.
