Apple Pie Egg Rolls

Apple Pie Egg Rolls are spiced apples rolled up in an egg roll wrapper with cream cheese, baked, and coated in cinnamon and sugar.

  • 5 medium Granny Smith apples, peeled, cored, and finely diced (about 3½ cups)
  • ¼ cup (50 g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cornstarch
  • 2224 egg roll wrappers
  • 8 ounces cream cheese, room temperature, about 2 teaspoons per egg roll
  • cooking oil or cooking spray
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • ½ cup caramel topping, warmed, for dipping

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix together diced apples, brown sugar, cinnamon, and cornstarch.
  3. Lay an egg roll wrapper flat and place 2 tablespoons of the apple mixture in the center. Add about 2 teaspoons of cream cheese.
  4. Fold up the bottom corner, then the sides, then roll up tightly. Seal the edge with water. Repeat for all wrappers.
  5. Spray egg rolls with cooking oil or lightly brush with oil. Place seam side down on the baking sheet.
  6. Bake 15-17 minutes, until golden brown and crisp.
  7. For the topping, combine sugar and cinnamon. Roll hot egg rolls in cinnamon sugar.
  8. Serve warm with caramel topping for dipping.
