🍌🫐 Banana Blueberry Protein Muffins – Fluffy, Sweet & High-Fiber!

These homemade banana blueberry protein muffins are fluffy, sweet, and packed with fiber. Made with ripe bananas, fresh blueberries, Greek yogurt, and protein powder for a nutritious breakfast or snack that satisfies without the guilt!

  • 1 ½ cups all-purpose flour
  • ½ cup protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 ripe bananas, mashed
  • ½ cup Greek yogurt
  • ¼ cup vegetable oil
  • ½ cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the mashed bananas, Greek yogurt, oil, honey, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the muffin cups, filling them about ¾ full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

These muffins freeze well – just thaw at room temperature or pop in the microwave. Substitute frozen blueberries if fresh aren’t available, but don’t thaw them first to avoid overmixing.
