Instructions

  1. Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter until well blended. Press the mixture evenly into the bottom of the pan to form a firm crust. Bake for 10 minutes, then cool completely.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing until just combined.
  4. Blend in vanilla extract, sour cream, and heavy cream until silky. Pour the mixture over the cooled crust.
  5. Bake for 40–45 minutes or until the edges are set and the center slightly jiggles. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  6. Transfer to the refrigerator and chill for at least 4 hours or overnight until fully set.
  7. In a small saucepan, gently heat berry preserves and lemon juice until smooth. Let cool slightly, then spoon over the chilled cheesecake.
  8. Arrange fresh strawberries, blueberries, and raspberries on top. Garnish with mint leaves and dust lightly with powdered sugar before serving.
