Fudgy Chewy Brookies

Ever since I published my favorite fudgy brownies over 3 years ago, readers have been gifting me and asking me to combine them with my favorite classic chocolate chip cookie. And so, the brookie was born! These brownies are rich, chewy, and fudgy. The chocolate chip cookies are soft and buttery. Together, they’re heavenly!

Ingredients

  • Brownies:
  • 1 cup (205g) unsalted butter, softened
  • 1 1/4 cups (250g) granulated sugar
  • 3/4 cup (150g) packed light brown sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1/2 cup + 2 Tablespoons (80g) unsweetened natural cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (80g) semi-sweet chocolate chips or chopped chocolate
  • Chocolate Chip Cookies:
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups (156g) all-purpose flour (spooned & leveled)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (180g) semi-sweet chocolate chips

Instructions

  1. Brownies:
  2. Preheat oven to 350°F (177°C). Grease a 9-inch baking pan with nonstick spray. Set aside.
  3. Microwave the butter in a microwave-safe bowl for 30-45 seconds until melted. Add sugars and whisk until combined. Let cool for 2 minutes.
  4. Whisk in eggs, one at a time, then vanilla. Fold in flour, cocoa powder, baking powder, and salt until combined. Fold in chocolate chips.
  5. Spread batter into the prepared pan. Bake for 15 minutes.
  6. Chocolate Chip Cookies:
  7. In a large bowl, whisk melted butter with both sugars. Whisk in egg and vanilla.
  8. Fold in flour, baking soda, and salt until combined. Stir in chocolate chips.
  9. Drop small spoonfuls of dough atop the brownies (they are not done baking yet).
  10. Bake for another 15-18 minutes, totaling 30-33 minutes. A toothpick inserted in the middle should come out with a few moist crumbs, not completely clean.
  11. Allow to cool before cutting into bars. Enjoy!

Notes

Room temp ingredients help with fudginess. Store in an airtight container for up to 1 week. Freeze for up to 3 months.
