  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chicken, shredded (or use shrimp or tofu for vegetarian)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened, about 3-4 minutes.
  3. Add bell pepper and zucchini, cook for another 5 minutes.
  4. Stir in orzo and chicken broth. Bring to a boil, then reduce to simmer.
  5. Cook for 10-12 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.
  6. Stir in cherry tomatoes, cooked chicken, oregano, salt, and pepper.
