Ingredients

For the Crust:

  • 1 lb fresh sea scallops
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Pat the scallops dry with paper towels and season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add scallops and sear for 2-3 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and add Cajun seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper. Stir for 30 seconds.
  4. Pour in heavy cream and simmer for 3-4 minutes until the sauce thickens slightly.
  5. Return scallops to the skillet and spoon sauce over them. Cook for another minute to heat through.
  6. Garnish with fresh parsley and serve immediately.

You can customize the seasonings to taste.
