For the Crust:
- 1 lb fresh sea scallops
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Pat the scallops dry with paper towels and season lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add scallops and sear for 2-3 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter and add Cajun seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper. Stir for 30 seconds.
- Pour in heavy cream and simmer for 3-4 minutes until the sauce thickens slightly.
- Return scallops to the skillet and spoon sauce over them. Cook for another minute to heat through.
- Garnish with fresh parsley and serve immediately.
