A deliciously sweet and easy strawberry pie with a flaky crust and fresh strawberry filling.

For the Crust:
- 1 9-inch pie crust, pre-baked
- 4 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Whipped cream for topping (optional)
Instructions
1. Prepare the Crust:
- In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thickened and clear.
- Remove from heat and stir in lemon juice and vanilla extract. Let the mixture cool slightly.
- Gently fold in the sliced strawberries until fully coated, then pour the mixture into the pre-baked pie crust.
- Chill the pie in the refrigerator for at least 4 hours or until set.
- Serve chilled with whipped cream if desired.
