For the Crust:

  • 1 9-inch pie crust, pre-baked
  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Whipped cream for topping (optional)

Instructions

1. Prepare the Crust:

  1. In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thickened and clear.
  2. Remove from heat and stir in lemon juice and vanilla extract. Let the mixture cool slightly.
  3. Gently fold in the sliced strawberries until fully coated, then pour the mixture into the pre-baked pie crust.
  4. Chill the pie in the refrigerator for at least 4 hours or until set.
  5. Serve chilled with whipped cream if desired.

You can customize the seasonings to taste.
