For the Crust:

  • 1 sheet puff pastry (thawed)
  • 100g blue cheese (crumbled)
  • 50g walnuts (chopped)
  • 1 tbsp fresh thyme leaves
  • 1 egg (beaten, for egg wash)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet into a rectangle and brush lightly with olive oil.
  3. Sprinkle crumbled blue cheese, chopped walnuts, and thyme evenly over the pastry.
  4. Roll the pastry tightly from the long side into a log, then slice into 1-inch thick rounds.
  5. Place the rounds on the baking sheet, brush with egg wash, and bake for 15-20 minutes until golden brown.
  6. Let cool slightly before serving.
