Blueberry Breakfast Quesadillas – Quick & Easy

Blueberry breakfast quesadillas are a quick, cheesy, and fruity morning recipe made with fresh blueberries, melted cheese, and golden tortillas, perfect for breakfast or brunch.

  • 4medium flour tortillas
  • 1 cupshredded mozzarella cheese (or Monterey Jack)
  • 1 cupfresh blueberries
  • 1 tablespoonbutter
  • 1 tablespoonhoney (optional, for drizzling)
  • Fresh cilantro for garnish

Instructions

  1. Lightly butter one side of each tortilla.
  2. Place one tortilla in a skillet over medium heat, butter side down.
  3. Sprinkle half the tortilla with shredded cheese and top with fresh blueberries.
  4. Fold the tortilla in half and cook for 2–3 minutes per side until golden brown and cheese melts.
  5. Repeat with the remaining tortillas.
  6. Slice into wedges, drizzle with honey if desired, and garnish with cilantro.

Notes

Use cream cheese or brie for a richer flavor variation.
Whole wheat or gluten-free tortillas can be substituted.
Frozen blueberries work well; thaw and pat dry before use.
Add a sprinkle of cinnamon inside for extra warmth and flavor.
Best served immediately while warm and crispy.
