A delicious and easy breakfast bake featuring blueberries and cottage cheese for a healthy morning treat.

  • 1 cup low-fat cottage cheese
  • 1 cup blueberries
  • 2 large eggs
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F.
  2. Mix cottage cheese, eggs, flour, baking powder, maple syrup, and vanilla in a bowl.
  3. Fold in blueberries.
  4. Pour into a greased baking dish.
