  • 4 cod fillets (6 oz each), about 1 inch thick
  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Butter for greasing dish

Instructions

    Notes

    Fish is done when internal temperature reaches 145°F
    Dont skip drying the fishmoisture prevents crispy topping
    Thicker fillets need extra cooking time
    Refrigerate leftovers up to 2 days. Reheat gently in 350°F oven to maintain texture.
    Freezing not recommended as fish becomes watery.
