These gluten-free protein biscuits are packed with 14g of protein per serving and are perfect for meal prep! They’re fluffy, freezer-friendly, and make a great breakfast option.

  • Wet Ingredients:
  • 1/2 cup almond flour
  • 1/4 cup protein powder (vanilla flavored)
  • 1/4 cup coconut flour
  • 2 tablespoons almond butter
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix protein powder, almond flour, coconut flour, baking powder, and salt in a large bowl.
  3. In a separate bowl, combine almond butter, eggs, almond milk, and vanilla extract.
  4. Combine wet and dry ingredients.
  5. Scoop dough into mounds on a baking sheet.
  6. Bake for 15-18 minutes until golden.

Notes

Store in the fridge for up to 5 days or freeze for up to 3 months. Thaw overnight and reheat in the microwave.
