Broccoli Tree Potato Bites

Fun and healthy vegetarian snacks shaped like trees, made with broccoli and mashed potatoes, great for kids’ meals or parties.

Ingredients

  • 1 head broccoli, cut into florets
  • 2 large potatoes, peeled and cubed
  • 1/2 cup cheddar cheese, grated
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, salt, and pepper.
  2. Steam or boil broccoli florets until bright green, about 5 minutes. Drain.
  3. Mix half the grated cheese into the mashed potatoes.
  4. Form the mashed potatoes into tree trunk shapes on a baking sheet.
  5. Place broccoli florets on top like trees, and sprinkle remaining cheese over the tops.
  6. Bake at 375°F (190°C) for 10-15 minutes until cheese is melted and bubbly.
  7. Serve warm.

Notes

These are easy to make and can be customized with other veggies. For extra fun, use cookie cutters for shapes.
