Delicious Butternut Squash Casserole Recipe

  • 4 cupscubed butternut squash
  • 1medium yellow onion, chopped
  • 2cloves garlic, minced
  • 2 tablespoonsolive oil
  • 1 tablespoonbutter
  • 1 tablespoonfresh sage, chopped (plus more for garnish)
  • 1/4 teaspoonground nutmeg
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1 cupshredded Gruyère or mozzarella cheese, divided
  • 1/2 cupbreadcrumbs (optional)
  • 1/2pound cooked sausage (optional)

Instructions

  1. Begin your journey by preheating your oven to 400°F (200°C).
  2. Next, peel the butternut squash using a sharp vegetable peeler or knife and chop it into 1-inch cubes. In a mixing bowl, toss these cubes with olive oil, salt, and pepper until evenly coated.
  3. Place the baking sheet in the preheated oven and roast the butternut squash for about 25–30 minutes or until it becomes fork-tender and develops a lovely golden color.
  4. While the squash is in the oven, take this time to prepare the flavorful base for your casserole. In a large sauté pan, melt butter and olive oil over medium heat. Add the chopped onion and sauté until soft and golden.
  5. In a large mixing bowl, combine the roasted butternut squash along with your sautéed onions, garlic, sage, a sprinkle of nutmeg, and half of your cheese.
  6. Transfer the rich mixture into a greased casserole dish. Sprinkle the remaining cheese over the top.
  7. Lower the oven temperature to 375°F (190°C) and bake for 20–25 minutes. You’ll know it’s done when the cheese is melted, bubbling, and the top is golden brown.
  8. After baking, let the casserole rest for about 5–10 minutes to allow the flavors to meld and it cool slightly.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days—just reheat in the oven for the best results.
