2 large sweet potatoes, peeled and cut into 2.5 cm cubes
2 tablespoons olive oil
2 tablespoons pure maple syrup
1 tablespoon pure maple syrup, for drizzling
0.5 teaspoon smoked paprika (optional)
Salt, to taste
Freshly ground black pepper, to taste
125 grams crumbled feta cheese
30 grams walnuts, toasted and roughly chopped
Instructions
Preheat the oven to 200°C and line a baking sheet with parchment paper.
Combine sweet potato cubes with olive oil, 2 tablespoons maple syrup, smoked paprika (if using), salt, and pepper in a large bowl. Toss thoroughly to coat.
Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
Roast for 25 to 30 minutes, turning the cubes halfway through, until caramelized and tender.
Transfer the roasted sweet potatoes to a serving platter. Top with crumbled feta and toasted walnuts, then drizzle with the remaining maple syrup. Serve warm.
Notes
For the best caramelization, ensure sweet potato cubes are in a single even layer on the baking sheet.
