Carrot Cheese Fritters – Crispy, Cheesy, and Full of Flavor

These crispy carrot cheese fritters are a delicious way to enjoy vegetables. Packed with grated carrots, cheddar cheese, and seasonings, they’re perfect as an appetizer or snack.

  • 2 cups grated carrots
  • 1 cup shredded cheddar cheese
  • 1/2 cup flour
  • 2 eggs
  • 1/4 cup chopped green onions
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup oil for frying

Instructions

  1. In a large bowl, mix grated carrots, shredded cheese, flour, eggs, green onions, salt, and pepper until well combined.
  2. Heat oil in a skillet over medium heat.
  3. Drop spoonfuls of the mixture into the hot oil and flatten slightly.
  4. Fry for 3-4 minutes per side until golden and crispy.
  5. Remove and drain on paper towels.

Notes

Serve hot with sour cream or your favorite dipping sauce. Adjust seasoning to taste.
