Carrot Cottage Cheesecake Bars – Creamy, Spiced, and Deliciously Unique

These bars combine the flavor of carrot cake with the creamy texture of cheesecake, featuring spices and a unique twist for a delicious treat.

  • 1 1/2 cups carrots, finely shredded
  • 1 cup cottage cheese
  • 1/2 cup cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs with melted butter and press into a greased 8×8 inch pan for the crust.
  3. In a bowl, blend cottage cheese, cream cheese, sugar, eggs, vanilla, cinnamon, and nutmeg until smooth.
  4. Fold in shredded carrots.
  5. Pour the mixture over the crust.
  6. Bake for 30-35 minutes until set.
  7. Cool completely, then refrigerate for at least 2 hours before cutting into bars.

Notes

Store in the refrigerator for up to 3 days. These bars are best served chilled.
