For the Crust:
- 4 large apples (such as Honeycrisp or Granny Smith)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 cup graham cracker crumbs
- 2 tbsp butter, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Core the apples, leaving the bottom intact to hold the filling.
- In a bowl, beat cream cheese, sugar, egg, vanilla, and cinnamon until smooth.
- Fill each apple with the cheesecake mixture, then sprinkle graham cracker crumbs on top.
- Drizzle melted butter over each apple and place in a baking dish.
- Bake for 25-30 minutes until apples are tender and filling is set. Let cool slightly before serving.
