Cheesy Beef Chimichangas

Crispy flour tortillas filled with seasoned ground beef, melted cheese, and flavorful spices, then fried to golden perfection.

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Vegetable oil for frying
  • Sour cream and salsa for serving

Instructions

1. Prepare the Crust:

  1. Brown ground beef with onion and garlic in a skillet over medium heat, drain excess fat.
  2. Add taco seasoning and water, simmer for 5 minutes until thickened. Remove from heat and stir in cheeses.
  3. Spoon beef mixture onto center of each tortilla, fold sides inward, then roll tightly to enclose filling.
  4. Heat 1 inch of oil in a deep skillet to 350°F. Fry chimichangas 2-3 minutes per side until golden brown and crispy.
  5. Drain on paper towels and serve immediately with sour cream and salsa.
