This Cheesy Fajita Chicken Casserole is a creamy, Tex-Mex inspired dinner filled with tender shredded chicken, rice, bell peppers, and melted cheese. It’s quick to prepare, comforting, and perfect for busy weeknights or family gatherings.

  • 2 cupsinstant rice, uncooked
  • 1can (10.5 oz) cream of chicken soup
  • 1 cupsour cream
  • 1 cupfrozen diced onion and bell pepper blend
  • 1can (10 oz) diced tomatoes with green chilies, undrained
  • 1 1/2 cupschicken broth
  • 1packet (1.12 oz) fajita seasoning
  • 2 cupsshredded Mexican blend cheese, divided
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, diced tomatoes with green chilies, chicken broth, and fajita seasoning. Mix until well combined.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. Sprinkle 1 cup of shredded Mexican blend cheese over the top.
  5. Bake uncovered for 25–30 minutes, or until the rice is tender and the casserole is hot and bubbly.
  6. Remove from the oven and top with the remaining 1 cup of cheese. Let it melt for 5 minutes before serving.
  7. Garnish with fresh cilantro or green onions if desired and serve warm.

Notes

Use rotisserie chicken to save prep time and add extra flavor.
Instant rice is essential for proper cooking time; regular rice may remain undercooked.
Do not drain the diced tomatoes—liquid helps cook the rice evenly.
Adjust spice level by increasing or decreasing fajita seasoning.
Make ahead by assembling the casserole up to 24 hours before baking.
