Cheesy Garlic Herb Chicken Bake is a cozy one-pan dinner featuring juicy chicken breasts, baby potatoes, green beans, and broccoli baked together with garlic, herbs, and melted mozzarella cheese. It’s an easy, family-friendly comfort meal ready in an hour.

  • 4 cupsbaby potatoes, halved
  • 2 cupsgreen beans, trimmed
  • 1 ½ cupsbroccoli florets
  • 3 tbspolive oil
  • 3cloves garlic, minced
  • 1 tspdried parsley
  • 1 tspdried basil
  • 1 tsppaprika
  • ½ tsponion powder
  • Salt and black pepper, to taste
  • 1 cupshredded mozzarella or Italian cheese blend
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish or tray with olive oil.
  2. In a large bowl, toss the baby potatoes, green beans, and broccoli with olive oil, minced garlic, parsley, basil, paprika, onion powder, salt, and pepper until evenly coated.
  3. Spread the seasoned vegetables evenly in the prepared baking dish. Place the chicken breasts on top and drizzle lightly with olive oil. Season again with herbs and spices.
  4. Bake uncovered for 35–40 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are tender.
  5. Sprinkle shredded mozzarella or Italian cheese blend evenly over the chicken and vegetables. Bake for an additional 5–10 minutes until the cheese is melted and golden brown.
  6. Remove from the oven, garnish with chopped fresh parsley, and serve hot.

Notes

Substitute asparagus or zucchini for green beans for variety.
Add a squeeze of lemon juice before serving for brightness.
Use chicken thighs for richer flavor or vegan cheese for dairy-free options.
