  • 1pound smoked sausage, sliced
  • 4 cupsbaby potatoes, halved or quartered
  • 2 tablespoonsolive oil
  • 1packet ranch seasoning mix
  • 1 teaspoongarlic powder
  • 1 teaspoononion powder
  • 1/2 teaspoonblack pepper
  • 1 1/2 cupsshredded cheddar cheese (or cheese blend)
  • 1/2 cupsour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and cut baby potatoes into halves or quarters.
  3. Slice smoked sausage into 1/4-inch rounds.
  4. In a small bowl, combine ranch seasoning mix, garlic powder, onion powder, and black pepper.
  5. Toss potatoes in olive oil and half of the seasoning mix.
  6. Spread potatoes evenly on the baking sheet and scatter sausage slices over them. Sprinkle remaining seasoning.
  7. Roast for 35–40 minutes, flipping once halfway, until potatoes are golden and tender.
  8. Remove from oven, sprinkle cheese on top, and bake for 5 more minutes until cheese is melted and bubbly.
  9. Garnish with parsley and serve hot with sour cream if desired.

Notes

Use parchment paper for crispier potatoes and easier cleanup.
For a spicier version, add red pepper flakes or jalapeños.
You can prep everything ahead and add cheese just before reheating.
Swap baby potatoes for cauliflower for a low-carb version.
