Creamy Cheesy Ranch Potatoes with Smoked Sausage

A delicious one-pot meal combining creamy potatoes with smoked sausage in a cheesy ranch sauce, perfect for an easy dinner.

Ingredients

  • 2 lbs baby potatoes, quartered
  • 1 lb smoked sausage, sliced into rounds
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 packet ranch seasoning mix
  • 2 tbsp olive oil
  • 1/2 cup milk
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the quartered potatoes with olive oil, salt, and pepper.
  3. Spray a large baking dish with non-stick spray and layer the potatoes in the bottom.
  4. Top the potatoes with sliced smoked sausage.
  5. In a small bowl, mix sour cream, ranch seasoning, and milk until smooth.
  6. Pour the ranch mixture over the potatoes and sausage.
  7. Sprinkle shredded cheddar cheese evenly on top.
  8. Bake for 35-40 minutes, or until potatoes are tender and cheese is bubbly.
  9. Garnish with chopped parsley if desired and serve hot.

Notes

For extra crispiness, broil for the last 2-3 minutes. Can be made in a slow cooker on low for 4-6 hours instead of baking.
