Instructions

  1. Preheat your ovento 425°F (220°C). Line a baking sheet with parchment paper.
  2. Grate the zucchinisand place them in a clean kitchen towel. Squeeze out as much moisture as possible.
  3. In a large bowl,combine the grated zucchini, 1 cup of mozzarella cheese, Parmesan cheese, beaten eggs, flour, baking powder, garlic powder, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.
  4. Transfer the mixtureonto the prepared baking sheet and spread it out evenly to form a rectangular shape, about 1/2-inch thick.
