Chewy Gingerbread Man Cookies

Chewy spiced gingerbread men perfect for baking, decorating, and sharing festive treats.

  • 375 grams all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 115 grams unsalted butter, softened
  • 110 grams brown sugar, packed
  • 120 millilitres molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Royal icing for decoration (optional)

Instructions

  1. In a large mixing bowl, whisk together flour, ground ginger, cinnamon, ground cloves, baking soda, and salt until evenly distributed.
  2. In a separate bowl, use a hand mixer or stand mixer to beat softened unsalted butter and packed brown sugar until light and fluffy.
  3. Add molasses, egg, and vanilla extract to the creamed butter mixture and blend until thoroughly combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until a cohesive dough forms.
  5. Cover and refrigerate the dough for at least one hour to facilitate easier rolling.
  6. Preheat the oven to 175°C. On a floured work surface, roll out the chilled dough to a thickness of approximately 6 millimetres. Cut into gingerbread man shapes using appropriate cookie cutters.
  7. Arrange the shaped dough on a baking tray lined with parchment paper and bake for 8–10 minutes, or until the edges are set.
  8. Allow the cookies to cool completely on a wire rack before decorating with royal icing if desired.

Notes

For best results, ensure the dough is well-chilled to prevent spreading when baking and achieve defined shapes.
Adjust spice levels to taste by varying the amount of ginger and cinnamon.
