For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (8 oz) can tomato sauce
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides, about 5 minutes per side.
- Add chicken broth, black beans, corn, diced tomatoes, tomato sauce, taco seasoning, cumin, and garlic powder to the pot. Stir to combine.
- Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes, or until chicken is fully cooked and tender.
- Remove chicken from the pot, shred it using two forks, and return it to the soup. Season with salt and pepper to taste.
- Serve hot with optional toppings like shredded cheese, sour cream, or tortilla chips.
