Decadent Chocolate Cherry Cake Recipe

  • 1 cupbuttermilk (substitute:1 cupmilk +1 tablespoonvinegar or lemon juice, left to sit for 5 minutes)
  • ½ cupvegetable oil (neutral oil like canola works best)
  • 2large eggs
  • 1 teaspoonvanilla extract
  • ¾ cuphot water (enhances the cocoa flavor)
  • For the Ganache: 1 cup heavy cream
  • 8 ouncesdark chocolate, chopped (use high-quality chocolate for the best ganache)
  • 1 cupcherry pie filling (store-bought or homemade)
  • Maraschino cherries for garnish

Instructions

  1. Prepare the cake batter by combining dry ingredients in a mixing bowl, then adding wet ingredients and mixing until smooth.
  2. Bake the cake layers in prepared pans at 350°F (175°C) for 25-30 minutes, then cool.
  3. Make the ganache by simmering cream, mixing with chocolate until smooth, and allowing to cool slightly.
  4. Assemble the cake by layering cooled cake with cherry filling and ganache.
  5. Garnish with maraschino cherries and serve.

Notes

Store any leftover cake in an airtight container in the refrigerator for up to 3 days.
