Instructions

  1. Lay out parchment paper on a large baking sheet and chill for 5 minutes.
  2. Combine 1.5 cups dark chocolate chips with 1 tablespoon coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely smooth (usually 90 seconds total).
  3. Whisk 3 tablespoons peanut butter into the melted chocolate mixture until completely incorporated and glossy.
  4. Fold 3 cups cooked quinoa into the chocolate mixture using a rubber spatula until every grain is coated.
  5. Spread the mixture onto prepared parchment paper in a single layer, about ½-inch thick. Sprinkle with flaky sea salt while chocolate is still warm.
  6. Optional: Drizzle with additional melted peanut butter in a decorative pattern while chocolate is still slightly warm.
  7. Refrigerate for 10 minutes until chocolate is completely set. Break into irregular clusters or cut into neat squares with a sharp knife.
