Christmas Ricotta Chia Pudding

A festive, creamy Christmas-themed chia pudding made with ricotta cheese, topped with holiday-inspired toppings like cranberries and nuts for a healthy, indulgent treat.

  • 1 cup ricotta cheese
  • 2 tablespoons chia seeds
  • 1/2 cup almond milk
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • A pinch of cinnamon
  • Toppings: Fresh berries and mint leaves for garnish

Instructions

  1. In a bowl, mix ricotta cheese, chia seeds, almond milk, honey, vanilla extract, and cinnamon until well combined.
  2. Cover and refrigerate for at least 4 hours or overnight to let the chia seeds thicken.
  3. Prior to serving, stir the pudding and divide into serving glasses.
  4. Top with dried cranberries, chopped walnuts, fresh berries, and mint leaves.
  5. Serve chilled.

Notes

For a vegan version, substitute ricotta with cashew cream. This pudding can be made ahead and stored in the fridge for up to 3 days.
