For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp cinnamon
- 1/2 cup granulated sugar (for coating)
- 1 tbsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually mix into butter mixture until dough forms.
- In another bowl, beat cream cheese, powdered sugar, and 1 tsp cinnamon until smooth.
- Roll dough into 1-inch balls, flatten slightly, and place a small dollop of cream cheese mixture in the center. Fold edges over to seal.
- Bake for 12-14 minutes until edges are golden. Let cool slightly.
- Mix remaining sugar and cinnamon in a bowl. Roll warm cookies in mixture to coat.
