For the Crust:
- 2 cans refrigerated cinnamon roll dough
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Unroll one can of cinnamon roll dough and press into the bottom of the pan to form a crust.
- In a bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Add eggs one at a time, mixing well.
- Pour cream cheese mixture over the cinnamon roll crust.
- Unroll the second can of cinnamon roll dough and cut into small pieces. Scatter over the cheesecake layer.
- Drizzle melted butter over the top, then sprinkle with brown sugar and cinnamon.
- Bake for 30-35 minutes or until the center is set. Let cool before serving.
