For the Crust:
- 6 slices day-old bread, cubed
- 4 large eggs
- 1 cup milk
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- Zest of 1 lemon
- 1/2 cup melted butter
- 1/2 cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a large bowl, whisk together eggs, milk, 2 tbsp sugar, vanilla, 1/2 tsp cinnamon, nutmeg, and lemon zest.
- Add bread cubes to the egg mixture and stir gently to coat. Let soak for 10 minutes.
- Divide the bread mixture evenly among the prepared muffin cups, pressing down slightly.
- Bake for 20-25 minutes until golden brown and set.
- While muffins bake, mix 1/2 cup sugar with 1 tbsp cinnamon in a shallow bowl.
- Remove muffins from oven and immediately brush with melted butter, then roll in cinnamon sugar mixture.
- Serve warm with maple syrup if desired.
