  • For Dough:
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup water
  • For Filling:
  • 1 cup cottage cheese (low-fat)
  • 1/4 cup chopped green onions
  • 1 egg yolk
  • Salt and pepper to taste
  • For Serving:
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Prepare the Dough:
  2. In a bowl, combine flour and salt. Add egg and water, mix until a dough forms. Knead for 5 minutes, cover, and rest for 30 minutes.
  3. Make the Filling:
  4. Mix cottage cheese, green onions, egg yolk, salt, and pepper in a bowl until well combined.
  5. Assemble Pierogi:
  6. Roll out dough thinly, cut into circles. Place filling in center, fold and seal edges with a fork. Repeat.
  7. Cook:
  8. Boil in salted water for 3-5 minutes until they float. Optionally, sautΓ© in a pan with a bit of butter for crispiness.
  9. Serve:
  10. Serve warm with sour cream or yogurt if desired.

Notes

These pierogi are boiled and can be frozen for later. Ensure sealing is tight to prevent filling leakage.
