  • For the coffee syrup:
  • 1 cup strong brewed coffee, cooled
  • 2 tablespoons instant coffee granules
  • 1/4 cup granulated sugar
  • For the cottage cheese filling:
  • 16 oz low-fat cottage cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz mascarpone cheese, softened
  • For assembly:
  • 24 ladyfinger cookies
  • 1/4 cup unsweetened cocoa powder
  • Fresh berries for garnish (optional)

Instructions

  1. Prepare the coffee syrup by whisking together the brewed coffee, instant coffee granules, and sugar until dissolved. Set aside to cool completely.
  2. In a blender or food processor, blend the cottage cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth. Add the softened mascarpone and blend again until fully combined.
  3. Dip each ladyfinger quickly into the coffee syrup (don't let them soak too long or they'll get mushy). Place them in the bottom of individual cups or a large dish.
  4. Spread a layer of the cottage cheese mixture over the ladyfingers.
  5. Repeat with another layer of dipped ladyfingers and cottage cheese mixture.
  6. Dust the top with unsweetened cocoa powder.
  7. Refrigerate for at least 4 hours or overnight before serving.
  8. Garnish with fresh berries if desired.

Notes

Prep the coffee syrup ahead to save time. Use fat-free cottage cheese for even fewer calories. Refrigerate leftovers in an airtight container for up to 2 days.
