🌮🧀 Cottage Cheese Veggie Quesadillas – Quick, Cheesy & Veggie-Packed!

These quick and cheesy cottage cheese veggie quesadillas are packed with fresh vegetables for a healthy, satisfying meal. Perfect for lunch or dinner!

Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup shredded spinach
  • 1 bell pepper, finely chopped
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced (for serving)

Instructions

  1. In a bowl, mix cottage cheese, spinach, bell pepper, black beans, corn, chili powder, salt, and pepper.
  2. Heat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet, add 1/4 of the filling and sprinkle with cheddar cheese.
  4. Top with another tortilla and cook for 2-3 minutes per side until golden and cheese is melted.
  5. Repeat with remaining ingredients.
  6. Cut into wedges and serve with sliced avocado.

Notes

Use low-fat cottage cheese for a lighter version. You can add more veggies like zucchini or mushrooms.
