  3. Pour in the chicken or vegetable broth, followed by the thyme sprigs and bay leaves. Bring it to a boil, then reduce the heat to a simmer. Let it cook for about 30 minutes, allowing the garlic to soften and release its robust flavor.
  4. Remove the thyme sprigs and bay leaves from the soup. Season with salt and pepper to taste.
  5. In a small bowl, whisk together the egg yolks and grated Parmesan. Gradually whisk in a ladle of hot soup into the egg mixture to temper it. Slowly return the tempered mixture back into the pot, and let it simmer for another 5 minutes, stirring constantly until the soup thickens.
