Creamy Balsamic Chicken with Roasted Onions and Sun-Dried Tomatoes

A flavorful and creamy chicken dish with balsamic glaze, roasted onions, and sun-dried tomatoes for an elegant meal.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, and garlic powder.
  3. In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 4-5 minutes per side until golden. Remove and set aside.
  4. In the same skillet, add sliced onions and sun-dried tomatoes. Sauté for 3-4 minutes until onions soften.
  5. Pour in balsamic vinegar and heavy cream. Bring to a simmer, stirring occasionally.
  6. Place the chicken back in the skillet, coating with the sauce. Transfer to the oven and bake for 15-20 minutes until chicken is cooked through.
  7. Serve hot with the sauce drizzled over the chicken.

Notes

Ensure chicken is fully cooked to an internal temperature of 165°F. Adjust cream for desired thickness.
