Cool Whip Pineapple Fluff is a creamy, no-bake tropical dessert made with crushed pineapple, Cool Whip, vanilla pudding, and marshmallows. It’s light, fluffy, and perfect for summer parties or potlucks.

  • 1(8-ounce) tub Cool Whip, thawed
  • 1(3.4-ounce) package instant vanilla pudding mix
  • 1 cupcottage cheese or8 ouncescream cheese, softened
  • 1/2 teaspoonvanilla extract
  • A pinch of salt
  • 1(20-ounce) can crushed pineapple, drained well (reserve2 tbspjuice)
  • 1 cupmini marshmallows
  • 1/2 cupshredded sweetened coconut (optional)
  • 1/2 cupchopped pecans or walnuts (optional)
  • Whipped cream, maraschino cherries, toasted coconut flakes, crushed graham crackers or vanilla wafers (for garnish)

Instructions

  1. In a large bowl, beat softened cream cheese (or blend cottage cheese) until smooth and creamy.
  2. Add the instant vanilla pudding mix and the reserved pineapple juice. Blend until smooth and thickened.
  3. Fold in the drained crushed pineapple, keeping small chunks visible for texture.
  4. Gently fold in Cool Whip to maintain a light and airy texture.
  5. Stir in mini marshmallows, coconut, and nuts if using.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to set.
  7. Before serving, fluff gently with a spatula and top with whipped cream, cherries, and crushed wafers. Serve chilled and enjoy!

Notes

Drain pineapple thoroughly to prevent a watery consistency.
Chill for several hours or overnight for best texture.
Fold gently to keep the fluff light and airy.
Can be made up to 24 hours in advance.
